Beef Stew with Sweet Potatoes- Whole 30 Friendly


I'm just a girl, standing in front of a stove, asking for dinner to make itself.

Fortunately this wasn't quite as difficult and time consuming as I imagined in my mind it would be.

And keeping it simple and CROCKPOT friendly made it that much easier on our busy schedules.

Ingredients:

1 lb lean stew meat (can sub chicken)
2 tsp EVOO 
2 medium sweet potatoes, diced & peeled
2 large red potatoes, diced & peeled
1 c chopped carrots
1 large green pepper, diced
2 tbsp minced yellow onion
1 can diced tomatoes
2 tsp oregano
1 tsp garlic salt
1 c beef stock (Whole 30 approved) 
Himalayan sea salt & black pepper to taste
2 bay leaves 

Directions

In a skillet brown beef with 2 tsp EVOO 2-3 minutes on each side.  Drain. 
Place all ingredients in crock pot and place beef on top.   Cover with broth.  
Cook on high 4-5 hours or low 6-8 hours.
