A super simple breakfast and snack muffin recipe that can be whipped up quick is a lifesaver! We baked these the other night for breakfasts and snacks! They're clean/healthy and nutritious too and perfect for those busy back to school mornings or afternoon snacks!
Kid Favorite Blueberry Muffins:
1.5 c quick cook oats
1/2 c whole wheat or almond flour
1 tsp baking powder
1/2 tsp cinnamon
1 large mashed banana
1 c vanilla unsweetened almond milk
1/4 c honey
1 egg, beaten
1/2 c blueberries (or chopped strawberries, blackberries, or 3 tbsp chocolate chips! 😉)
Pinch of sea salt
Mix everything together in a bowl. Spoon by heaping tablespoons into a mini muffin tin and bake at 350* for 13-17 minutes. Enjoy!
