Summer = BBQ. I always eat too much BBQ and feel miserable afterward- who's with me? So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!
My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly. Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal! Enjoy!
1/2- 3/4 c From Scratch BBQ Sauce
4 medium chicken breasts, thawed
1 tsp sriracha (to taste)
1 tbsp chopped cilantro
4 small sweet potatoes, baked
In a crockpot sprayed with olive oil spray, place 4 thawed chicken breasts. Combine sauce & sriracha and pour over chicken. Cook on low for 4-6 hours until chicken pulls apart easily. Shred chicken, optional add additional 1/4 c BBQ sauce.
Scoop into baked sweet potatoes and top with chopped cilantro.
