When I lived in Soulard there was a little coffee shop that made the very best chicken salad. I lived off that stuff. Creamy. Nutty. The chicken was cooked perfectly. I still get warm fuzzies thinking about it.
Today. Warm fuzzies. This lunch was hands down one of the best things I've made in a long time. It was simple and delicious. Creamy, clean, healthy and hit the spot. Nothing more. Nothing less. Just perfection. If you're looking for a new favorite chicken salad, I hope this is it. Enjoy!
For the wrap:
1 large grilled chicken breast, diced
1/2 c green grapes, sliced
1 tbsp sliced almonds
1/4 c diced cucumbers
1 c spinach, chopped
Whole grain flatbread wrap
For the dressing:
1/4 c plain Greek yogurt
1 tbsp Dijon mustard
1 tsp wildflower honey
In a medium bowl, place chicken, grapes, cucumbers, & almonds. Mix ingredients for dressing separately and toss chicken mixture in dressing. Place chopped spinach in wrap then scoop chicken mixture onto spinach (This can serve two!). Slice, serve, enjoy!
