An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those "come together" moments. I had the quinoa cooked, I'd already steamed the kale, and I was chopping up peppers when I thought- why don't we put this together! And this recipe was born! Enjoy!
6-8 mini peppers
2 c steamed chopped kale
1 c cooked quinoa
1/4 c (extra) diced peppers & red onion
Feta cheese, optional
Cook quinoa according to package. Steam kale until dark green. Sauté extra diced peppers and onions in skillet with 2 tbsp water. Slice mini peppers in half, top to bottom. Toss quinoa, kale, sautéed veggies in a bowl and scoop into peppers. Optional: top with feta cheese. Enjoy!
