For the Salad:
1 medium chicken breast, cooked and chopped into 1" pieces
1 tsp sunflower seeds
2 c broccoli and carrot slaw
For the dressing:
1/3 c rice vinegar
1/3 c low sodium soy sauce
1 tsp organic wildflower honey (or pure maple syrup)
2 tbsp grated ginger
5 tbsp sesame oil
Combine first four ingredients for the dressing in a bowl, whisk to blend. Slowly add oil while whisking. Mix well. Store covered in the fridge.
Toss salad ingredients with 1 tbsp of dressing. Enjoy!
