Easy Chicken Burrito Bowls

We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend.  I mean, wow.  Hand made corn tortillas, mahi, braised spare rib, marinated portabella... I was in total heaven.  We ate there twice.  Then we found Nashville Street Tacos... agghhh!  More deliciousness! I couldn't get enough southwest style fare (yeah, in Nashville, I know).  So when we got home I decided I was going to throw in a few similar style southwestern flair dinners for this weeks menu. Last night we did a deconstructed chicken burrito.  It was heavenly.  One happy husband, and three happy kids. And I had to stop myself from going back for seconds.  This is a great lower carb, protein packed, all-in-one dinner that fills you up and doesn't overload with calories!  And it's 21 Day Fix friendly too!
