Superfood Chicken Chili (crockpot)

This soup came to fruition after looking through my fridge/pantry, deciding I needed to go grocery shopping, but with a barfy kid, feeling quarantined to the house, I decided I needed to use up what was left of my previous week’s meal prep/grocery trip first.

Enter: Superfood Chicken Chili 

And let me tell you... this turned out so much better than I imagined!  

This could easily be done in an Instant Pot too- but I haven’t purchased mine yet!

Ingredients:

2-3 medium/large chicken breasts
3/4 c lentils, raw, washed
2 c organic vegetable broth 
1 can organic fire roasted tomatoes 
1 large green pepper, diced 
3 large carrots, peeled and diced
2 c kale, finely chopped 
1/2 c frozen edamame 

Spices:
2 tsp chili powder 
1 tsp cumin
1/2 tsp garlic powder
1/4 tsp cinnamon 
Sea salt/black pepper to taste 

Directions

In a crock pot, place chicken, tomatoes, broth, pepper, carrots, and lentils.  Cook on low 4-6 hours.  Add kale and edamame.  Stir.  Cover and turn to warm for 5 minutes.  

Serve and enjoy!  Can top with 1 tbsp of hemp seeds too!

1.5 c serving =
1 green
1 red 
1 yellow 
(Hemp seeds = 1 Orange)

Easy Egg All in One Breakfast Muffins

I’m embarking on a new program next week.  To be honest, I’m pretty excited.  A fitness and nutrition adventure that for the next 3 months (ish) is going to shape my mindset (and my butt, arms, and abs) and the way I think about nutrition into some pretty amazing results.

I was pouring into the nutrition plan the other night and the idea of a preworkout meal is something as a bikini competitor I’m familiar with but with mom life and kid needs it doesn’t always happen.  So as part of this nutrition plan I’ll be incorporating timed nutrition to fuel results and feed my muscles and metabolism the foods they need in order to grow, burn, and function at optimal level.  And I’m bringing several dozen other women with me. 

This is one of the simplest to make and ideal nutritive things combinations for a preworkout meal- one designed to be consumed 60-90 minutes prior to beginning a workout or if you’re like me with raging high metabolism, about 15 minutes before I begin.

Ingredients 

1 dozen eggs (half whole eggs, half egg whites)
1 large bell pepper, diced
1/4 onion, chopped
2 c spinach, finely minced 
2 c cooked, finely chopped baby red potatoes 
1 c cherry tomatoes, halved
2 tbsp coconut oil, melted & drizzled evenly into muffin pan 
1 tsp sea salt
1/2 tsp black pepper 

Directions:

Preheat oven to 350*.  Drizzle melted coconut oil into muffin tins.  Whisk eggs until blended, add spinach and seasonings.  Add potatoes, peppers, onion, tomatoes to muffin tins.  Pour egg mixture into muffin tins. 

Bake at 350* x 20 minutes.  Cool on rack x 5 minutes. 
Enjoy!

These make 12-14 muffins aka one week of prepped preworkout meals!

Resolution Evolution : Achieving Your Best Year Yet in 2018

It always amazes me how fast the year flies by... wasn't it just summer?  And here we are closing another chapter, turning another page, and flipping over to a new calendar.

I set out my 2017 with some pretty solid goals, of course always involving some form of personal growth, development, better my health and fitness, get in optimal shape, eat a little better, push a little harder, love a little more deeply, and enjoy every experience.

Do all of those things happen in order, and as planned?  Of course not.  I'm not as lean as I was at the beginning of last year, in fact, I've gained 10 lbs.  I've eaten *mostly* healthy but didn't neglect my love for tacos or wine, much at all really!  And we did some traveling, had some amazing experiences, and that brings us to setting goals for 2018. 

One thing I've learned over the course of my coaching career and personal health and fitness journey is that we evolve.  It's a process.  It takes time.  But it's worth the effort.  Every last drop of sweat.  Every early morning alarm clock.  Every healthy choice over fast food.  Every sparkling water over wine.  Every up-too-late night.  It's worth it.  Because it teaches us the process and it teaches us consistency over time brings the greatest results.

Garlic Butter Shrimp “Linguini” With Zoodles

That day-after-Christmas food hangover... you know the one.  Too much cheese.  Too many crackers.  Pie up to your eyeballs.  Potato casserole. Spiked egg nog. All of the goodies.

Back on track today.  With a fridge full of leftovers.

I opened my fridge, overwhelmed with what was left, and just wanted something light & simple.  So I grabbed the leftover shrimp from the shrimp cocktail.  Some veggies from the veggie tray.  The zucchini that never got roasted as planned, and some Parmesan cheese from the au gratin potatoes.  5 minutes later- a light, healthy lunch happened.  And it happened to be delicious!

Low carb.  Light.  Full of protein & veggies.

Enjoy!

Ingredients:

8-10 medium/large shrimp
1 large zucchini, spiralized 
4 baby carrots, spiralized
2-3 mini peppers, sliced thin
1/2 tbsp grass fed butter
1 tsp garlic powder
1 green onion, chopped
1 tbsp fresh Parmesan cheese. 

Directions

In a large skillet, sauté butter, carrots, & peppers, 2-3 minutes.  Add zucchini. Stir 1-2 minutes until zoodles soften.  Add shrimp & garlic powder.  Sauté an extra 2-3 minutes.
Plate & garnish with green onion & cheese.  Enjoy!

This could be doubled for 2 servings or one large serving for one. 

For 21 Day Fix Containers:

1 red = shrimp
1 blue = cheese 
2 green = veggies 
2 tsp = butter

Cashew Chicken + Zoodles (Whole 30/Low Carb)

I saw a similar recipe in a cookbook at Anthropologie last weekend and it’s been on my mind ever since.  So tonight I recreated it- only subbing zoodles and unsweetened cashew butter as well as coconut aminos.


No sugar here.  And it’s low carb & Whole 30 friendly too!  Delicious. Savory.  Filling.


Here’s the recipe!


Ingredients:

1 large zucchini (spiralized)

2 large carrots (spiralized)

1 c roasted edamame

4 medium chicken breasts

1/4 c raw, unsweetened cashew butter

2 tbsp coconut aminos

Red pepper flakes to taste

1 tsp coconut oil


Directions:

*I cooked my chicken in the crockpot*

Place chicken, cashew butter, & coconut aminos in a crockpot & cook on low for 4-6 hours.

Spiralize zucchini & carrots.

Place 1 tsp coconut oil in a skillet.

Sauté zoodles/carrots & edamame 2-3 minutes.

Shred chicken.

Top zoodles mixture with chicken.

Season with red pepper flakes.


Can add chopped cashews or drizzle of coconut aminos too!

5 Minute Taco Soup




❤️🌮🥘 EASY DINNER RECIPE!!! 🥘🌮❤️

What do you do when you’re not feeling so hot and it’s  Taco Tuesday ?

You turn your weekly taco night into soup!

This took all of 5 minutes to throw together.  The combination of black beans, roasted chicken, and juicy tomato, ohhh it was good!

I used leftover roasted chicken from our Sunday Meal Prep and tossed in a few things from the fridge and pantry.  Super easy!  Here’s the recipe! 👇🏼👇🏼👇🏼❤️

Ingredients:

1 c organic vegetable broth
1 can organic black beans, drained
1/2 can green chilis
1/4 yellow onion, chopped
1 c diced cherry tomatoes
1/2 c finely chopped carrots
2 small chicken breasts, diced
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder

Directions:
Throw everything in a large saucepan and bring to a boil.  Reduce heat to medium and simmer for 10 minutes.

Top with avocado and diced green onion.

Enjoy!
