Tis the season- for making big goals and thinking about the next year.  New year, new you, right? 

I always used to be the girl who would use the holidays as an excuse to eat all the things until January rolled around, then I'd decide to get serious.  I'd buy an ab belt or do some sort of unhealthy "cleanse" or watch my gym membership go unused- I literally went an entire year with a free gifted gym membership and I only used it twice.

5 Minute Taco Soup




❤️🌮🥘 EASY DINNER RECIPE!!! 🥘🌮❤️

What do you do when you’re not feeling so hot and it’s  Taco Tuesday ?

You turn your weekly taco night into soup!

This took all of 5 minutes to throw together.  The combination of black beans, roasted chicken, and juicy tomato, ohhh it was good!

I used leftover roasted chicken from our Sunday Meal Prep and tossed in a few things from the fridge and pantry.  Super easy!  Here’s the recipe! 👇🏼👇🏼👇🏼❤️

Ingredients:

1 c organic vegetable broth
1 can organic black beans, drained
1/2 can green chilis
1/4 yellow onion, chopped
1 c diced cherry tomatoes
1/2 c finely chopped carrots
2 small chicken breasts, diced
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder

Directions:
Throw everything in a large saucepan and bring to a boil.  Reduce heat to medium and simmer for 10 minutes.

Top with avocado and diced green onion.

Enjoy!

'Tis the season... 

To make attempts to stay on track... but in reality... wine, turkey, appetizers, boozy festive drinks, parties, and too many cookies ALWAYS interfere with those plans.

Broccoli Cheddar Stuffed Sweet Potatoes

I think we all know what’s important in life.

Food that you can melt cheese on top of.

Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part.  Granted this took almost an hour to cook, prep was about 10 minutes tops.  And the melty cheese part, well that’s a bonus.

I hope you enjoy this as much as I did!  Please leave me a comment below of what you thought!

Ingredients: 

4 small- medium sweet potatoes
2 lbs chicken breasts, thawed
Herbed chicken seasoning 
1 bag frozen riced broccoli (or separately mince/pulse broccoli in food processor)
4 tbsp shredded cheddar cheese

Directions:

Puncture sweet potatoes with a fork. Wrap in foil.  Bake at 350* for 45 minutes. 
Season chicken with herbed seasoning.  Place in glass baking dish and bake for 30-40 minutes until juices run clear. 
* Chicken and potatoes can bake in the same oven at the same time!
In a skillet, cook broccoli 3-5 minutes until tender.
Shred chicken. Slice open sweet potatoes. 
Stuff with chicken and broccoli mixture. Top with cheddar cheese. 
Pop under broiler for 3-5 minutes until cheese bubbles. 
Serve and enjoy!

The Final Countdown- 8 Week Fitness Bootcamp 11/6-12/31

It's the final countdown... did you sing it like you remember it from the 80's?!  

Tell me if you've been here before.  That first week of a brand new year and ambition is high.  We set lofty goals.  We're determined.  We want to lose X amount of pounds and inches.  We envision this rockstar summer body.  We are going to CRUSH it this year.... and then St. Patty's day happens.  Then Easter candy.  Memorial Day, summer BBQ's, Labor Day, Halloween Candy... and well, goals didn't quite get met.  Progress was, well... 


Think about this... 

There are 9 weeks left in 2017...

If you lose 3 pounds per week that's 27 lbs by the end of the year.
If you lose 2 pounds per week that's 18 lbs by the end of the year.
1 pound... you get it.  

That's at least one change in clothing size.  A brand new size for a New Year's eve dress.  That's a hell of a start for 2018.  And I'll be preparing you for my 80 day challenge launching in January.

Buffalo Chicken Lettuce Wrap Tacos



Ingredients:

4 boneless, skinless chicken breasts, thawed
1/2 c Buffalo Wing Sauce
1/4 c Greek yogurt ranch dressing 
Romaine lettuce leaves 
Shredded low fat cheese
Additional Ranch for topping

Directions:

In a crockpot, combine chicken, wing sauce, and Greek yogurt ranch. Cook on low 4-6 hours. 

Remove chicken and shred. 
Place mixture into lettuce leaves.  Top with shredded cheese and additional ranch if desired. Enjoy!
