Texas Caviar- Clean and Simple

We all do it.  We have a BBQ coming up.  We swear we're going to plan ahead, find some cute/healthy/fun recipe on Pinterest to make and an hour before we go it's scramble mode to get it together!  

Raiding the pantry and trying to throw something together.  

Fortunately, if you're like me and have a few things in your pantry and fridge already, this can be a breezy 5 minute recipe!  

We use this as a salad, a side, a dip for tortilla chips, and to top turkey burgers, burritos, tacos, and really anything!  

You can swap out several things but here's a good base!  

Ingredients

1 can organic black beans, drained & rinsed
1 can organic sweet corn, drained 
1 can Rotel (or tomatoes with green chiles), with juices
1 avocado, diced 
1/2 green (or red/orange) pepper, diced 
2 tbsp red onion, minced
1-2 tbsp finely minced jalapeño (optional)
1 lime, squeezed
1 tsp garlic powder
2-4 tsp chili powder 
2 tbsp chopped fresh cilantro or 2 tsp dried 
Dash Himalayan sea salt

Directions

Mix everything together in a large bowl.  Can swap out fresh tomatoes, a can of green chiles, add in chickpeas or pinto beans too, or green onion!

Quinoa Chicken Salad- Mediterranean

Yesterday we hosted a little housewarming party/BBQ and where I love a fridge full of leftovers, I get tired of eating the same thing.  So I   whipped up a simple salad with some leftovers.  Enjoy!  Share!  Love!  


Mediterranean Quinoa Chicken Salad


For the quinoa salad:

1 c quinoa

2 c water 

(Cook according to package) 

When cooked and fluffed with fork, add:

1 medium cucumber, diced 

1 large (or 3 Roma) tomato, diced

1/2 green pepper, chopped 

1/4 red onion, minced

2 tsp EVOO 

1/4 c roasted red pepper dressing 

1/2 tsp Himalayan sea salt 

1 tsp oregano 


Toss ingredients together. 


Add in 1-2 c chopped kale, or kale salad mix 

Chop 1-2 grilled, marinated chicken breasts and serve over top 

Top with 1-2 tbsp feta cheese 

Add Greek olives- optional 

Drizzle with additional tbsp of red pepper dressing per serving.

3 Week Summer Sweat- June 19 - July 10

Honey Balsamic Chicken Stir-Fry

 

Tonight's dinner took 10 minutes start to finish.  1-2 minutes to chop chicken and veggies (we grill a bunch of chicken on Sunday for meal prep during the week).  7 minutes to cook it all in the skillet.  1 minute to plate and serve!  

***Cauliflower rice is such a healthy alternative especially if you're gluten free or following a low carb plan.  You can't even tell the difference!  My husband loved it and he doesn't eat cauliflower!  

For the Stir Fry
2 c chopped chicken (grilled it yesterday- we use it for meal prep!)
1 pkg frozen riced cauliflower 
1 large red bell pepper- diced
2 c chopped broccoli (or 1 frozen package)
1 tsp EVOO

For the Sauce
2 tbsp wildflower honey
1 tbsp balsamic vinegar 
1 tsp ground mustard 
1/2 tsp garlic powder 
2 tsp sesame seeds (for a garnish at the end)

Directions
Sautée peppers & broccoli in oil for 3-4 minutes.  Add chicken and cauliflower.  Cook 2-3 more minutes. 
Stir all ingredients (except sesame seeds) together.  Pour over stir fry.  Toss.  Serve & enjoy!  Top with sesame seeds!

Who Is Shaun T?

Here’s Leandro’s advice on how to start losing weight:

  • Be patient. If you try to do too much, it can backfire and you might hurt yourself so start easy and take your time.
  • Start drinking more water.
  • Make better choices in your diet.
  • Stick with it. Be persistent and be committed so you can improve each time.
It might be easier said than done to just start, but it’s more about simplifying. Doing something is better than doing nothing. Pick one or two healthier new things to try, such as drinking a glass of water before each meal or adding one non-starchy vegetable to each meal, and practice those new things until they become second nature. Then pick another one or two healthier new things to try. Soon these small changes will begin to compound into big results.  One day at a time. One workout at a time.  One meal at a time.
